30ml Little Biddy Gin – Classic
30ml Reefton Distilling Co. Tayberry Liqueur (or Chambord)
20ml Fresh lemon juice
1 Egg white

Method
Dry shake all ingredients to emulsify egg white. Shake with ice. Double strain into chilled coupe.

Garnish
Sprinkle with freeze-dried raspberry powder.

30ml Little Biddy Gin – Classic
90ml Indian Tonic

Garnish
Lemon wheel
Tarata leaves (optional)

Into the Elements

30ml Little Biddy Gin – Classic
15ml Amaro Montenegro
15ml Marsala, or Rosso Vermouth
15ml Fresh lemon juice
5ml Simple syrup
1 Egg white
½ tsp Activated charcoal

Method
Dry shake all ingredients to emulsify egg white. Shake with ice. Double strain into chilled coupe.

Garnish
Sprinkle with freeze-dried raspberry powder

Due West Bramble

30ml Little Biddy Gin – Classic
20ml Reefton Distilling Co. Tayberry Liqueur (or Crème de Mûre)
20ml Fresh lemon juice
10ml Simple syrup

Method
Shake gin, lemon juice and simple syrup with ice. Strain over crushed ice into short glass. Top with crushed ice. Lace over Reefton Distilling Co. Tayberry Liqueur

Garnish
Fresh in-season berries. Lemon wheel.

Wild Swan

30ml Little Biddy Gin – Classic
90ml Grape, or cranberry juice
20ml Fresh lime juice
20ml Simple syrup
6 Red grapes, or blueberries
½ tsp Activated charcoal
Soda water

Method
Muddle grapes with simple syrup. Add all other ingredients. Shake and strain into glass over ice. Top with soda.

Garnish
Fresh in-season berries. Lemon wheel. Tarata leaves (optional).
