45ml Little Biddy Vodka – Kiwifruit
15ml St Germain Elderflower liqueur
15ml Fresh lime juice
5ml simple syrup (optional/adjust as per sweetness of limes)
Egg white

Method
Add all ingredients to a cocktail shaker and dry shake (without ice) then add ice and shake hard until very cold and aerated. Fine strain into a chilled cocktail coupe.
Garnish with a dehydrated kiwifruit wheel

Sugar Syrup
100g white sugar
100ml hot water
Mix until sugar is completely dissolved, let it cool then refrigerate
