Pioneer Apricot Sour

60ml Moonlight Creek ‘Pioneer’ Single Malt Whisky
15ml Apricot Brandy
22.5ml Fresh Lemon Juice
10ml Manuka Honey Syrup (1:1)
1 Egg white

Add all ingredients into a cocktail shaker and dry shake. 
Add ice and shake again until well chilled.
Fine strain into a chilled coupe glass.
Garnish with a fresh thyme sprig or a dried apricot.

Manuka Honey Syrup (1:1)
100g Manuka Honey Syrup
100ml Warm Water
Stir until honey has dissolved and then cool.
