Garden Zest Smash

45ml Little Biddy Zest Gin

3 fresh lemon wedges
8-10 fresh mint leaves
15ml Chamomile Honey Syrup*
Splash of Soda Water
Garnish with a cucumber ribbon and fresh mint 

Method:
In a shaker, muddle the lemon wedges with chamomile honey syrup to release juice and oils.  
Add mint leaves (lightly smacked) and Little Biddy Zest Gin.

Shake briefly with ice, strain into a rocks glass filled with crushed ice and a cucumber ribbon spiralled inside.  Top with a splash of soda water and garnish with a mint sprig

* Chamomile Honey Syrup
Brew a strong chamomile tea (2bags in 150ml hot water, steeped 5 minutes)
Mix 1:1 with honey while still warm, stir until smooth
Cool and store in fridge (keeps about a week)
