Citrus and elderflower sorbet
Serves 10

100g Lemon juice
100g Sugar
250g Boiling water
50g Elderflower cordial
3g Blue spirulina powder
2g Mint stalks
3 Slices cucumber

Method
Put sugar, mint and cucumber in a heat proof bowl.
Add boiling water and stir to dissolve.
Add lemon juice, elderflower cordial and blue spirulina powder
and blend together on low.
Strain through a sieve into a bowl. Freeze and enjoy.
